I tried racing a sailboat with this one guy who I met at a forum, but then during the race, the jib sheet knot came loose. I realized it's my fault because I've been leaning in my full weight into the jib sheet whenever I'm hiking out... so if something happens to him it would've been on me. He would have fallen... Is it unsafe doing this? Does any of you still do this? Or is mine just faulty?

It seems like you put too much strain on the knot, which is definitely not ideal. It's best to make sure the knots are secure and avoid relying too heavily on your body weight to keep them tight. faulty or not, its hard to tell since you already put too much strain on the knot

Nothign personal, but it's probably on you. To hike out you'll need to make sure the knot line and rig are set up to handle the weight of a man or a woman. Maybe consider a dedicated strap or a trapeze system that can handle the load without increasing the risk. There is a lesion to be learned, and I'm sure you won't make the same mistake again.

Personal error. Yes, I agree that it's your fault but since the damage has been done, you just have to be careful.
